"La figliastra di Carla è molto simpatica."
why is that we are using "molto" instead of "molta?" |

when "molto" modifies an adjective, it does not change. When it is used as an adverb, it changes according to the gender and plural/singular form of the name it precedes. e.g. I gatti sono molto affettuosi VS Ci sono molti gatti in cucina. |

When "molto" modifies an adjective, then it is an adverb. Averbs don't change their ending to match what they modify. Adjectives always modify nouns, and usually change their endings to match the gender of the noun that they modify. |
